La drip cake al cioccolato e pistacchio è la torta che ho preparato ieri per il mio compleanno.
Dato che è appena arrivata la primavera, ho deciso di decorarla con fiorellini, panna e macarons.
La torta è buonissima, morbida e golosa e la colata di pistacchio completa la sua bontà.
Provatela appena riuscite, non ve ne pentirete!
DRIP CAKE AL CIOCCOLATO E PISTACCHIO
Per una torta di 20 cm di diametro
Per la base
9 uova divise tra tuorli e albumi
270 g di zucchero
75 di fecola di patate
120 g di farina 00
la polpa di una bacca di vaniglia bourbon
Per il ripieno
150 g di cioccolato fondente
150 g di cioccolato al latte
150 ml di panna da cucina
Per la colata di pistacchio
150 g di cioccolato bianco
50 g di crema spalmabile al pistacchio
50 ml di latte intero
Per decorare
panna montata
fiori di zucchero
2 macarons
Sbattete gli albumi a mano a mano con lo zucchero fino ad ottenere una meringa solidissima. Aggiungete i tuorli. Unite fecola e farina setacciate e la vaniglia.
Versate il composto in 3 teglie da forno.
Cuocete in forno a 180° già caldo per circa 13-15 minuti.
Nel frattempo preparate la crema fondendo i due tipi di cioccolato e aggiungendo (mescolando vigorosamente) la panna da cucina.
Fate raffreddare gli strati, intagliate con uno stampo a cerniera 6 dischi di torta. Farcite con la crema al cioccolato e con la restante crema glassate la torta con l'aiuto di una spatola.
mettete a torta in frigo per circa 30 minuti.
Fondete il cioccolato bianco e unite la crema di pistacchio, mescolate e aggiungete gradatamente il latte fino ad ottenere una crema fluida e lucida, aspettate qualche minuto prima che si rapprenda.
Versate il composto sulla torta e fate colare ai lati.
Decorate con ciuffetti di panna, macarons e fiorellini di zucchero.
