Per 12-14 coppie di biscotti
175 g di burro freddo
50 g di zucchero a velo
1 pizzico di sale
1 tuorlo
50 g di farina di nocciole
250 g di farina 00
la polpa di mezza bacca di vaniglia
100 g di cioccolato fondente al 60%
qualche cucchiaio di crema spalmabile alle nocciole o pistacchio
Versate il cioccolato fuso (io l'ho temperato) negli stampi a stella e fate solidificare in frigo.
Lavorate velocemente il burro freddo con lo zucchero a velo, il sale e la vaniglia. Unite il tuorlo e impastate bene. Aggiungete infine le farine.
Formate una palla liscia ed omogenea e copritela con della pellicola trasparente. Fate riposare in frigo per circa un'ora.
Stendete la frolla su una superficie leggermente infarinata fino a raggiungere uno spessore di circa 5 mm. Ritagliate delle stelle con l'apposito stampino.
Trasferite i biscotti con delicatezza su una placca foderata con carta da forno distanziandoli un pochino.
Cuocete in forno caldo a 175°C per 12′ – 15 ‘, finché saranno leggermente dorati. Non appena saranno cotti risulteranno morbidi e fragili, quindi lasciateli raffreddare nella teglia per 5 minuti, poi metteteli su un gratella per decorarli.
Unite poca crema spalmabile alla nocciola o al pistacchio e incollate le stelle di cioccolato sopra ogni biscotto.
